The extra aging gives this older whiskey the smooth mellow flavor that blends well with the barrel proof. The wheat in the recipe is quite obvious as this delightful bourbon passes over your tongue. Smooth and robust on the palate with hints of stewed cherry and butterscotch. A subtle sweet smokiness leads into a lengthy and semi-sweet finish. Pungent aromas of butterscotch leap to the forefront of the nose followed by grapefruit zest cigar box ripe dark plum and a quite foxy muscat-like aroma reminiscent of fine grappa. Initially sweet with restrained vanilla then drier oaky notes develop fading into furniture polish and soft malt in the finish.
